BUNDT DE CHOCOLATE CON RELLENO SORPRESA - SURPRISE FILLED CHOCOLATE BUNDT CAKE #BUNDT BAKERS






Hola, ya vuelvo a estar aquí con el reto mensual de Bundt Bakers. Como ya sabéis, #Bundtbakers es un grupo de bloggers a los que les apasionan los bundts y que se reúnen una vez al mes para hacer una receta con un ingrediente, elegido por un anfitrión que normalmente es voluntario. Nuestra anfitriona este mes es Anshie de spice roots y el tema escogido es "relleno sorpresa". Las posibilidades son infinitas y eso hace que escoger una sea muy complicado, la única condición es que la sorpresa esté dentro del Bundt, es decir, esté relleno. Anshie, gracias por ser la anfitriona y por hacer de esta ocasión algo tan misterioso e interesante. 

Después de pensármelo mucho, he escogido este Bundt cuyo resultado ha sido para mí una auténtica sorpresa. Nunca había hecho uno relleno y podría decir que nunca me había atrevido a inventarme una combinación como la que sigue. Sólo puedo decir que ha sido un misterio hasta el último momento, cuando ha subido lo suficiente en el horno (no las tenía todas) y cuando lo he probado y estaba buenísimo.

Ya que te has molestado en leer hasta aquí te diré que el Bundt se llama: Bundt cake de chocolate con relleno sorpresa de pastel de queso y pomelo. Ahí queda eso!

Y sin más dilación ahí va mi receta.

INGREDIENTES para el bizcocho

75 gr, (2/3 taza de) cacao tamizado,
250 gr (2 1/4 taza) de harina
1 1/2 tsp levadura en polvo
450 gr (2 tazas) azúcar
1 1/2 tsp bicarbonato sódico
3/4 tsp sal
354 gr (1 1/2 tazas) zumo de naranja (o mitad naranja y mitad agua, o todo agua)
3 huevos
2 tsp vainilla
280 gr (1 1/4 cups) aceite vegetal 

INGREDIENTES para el relleno sorpresa de tarta de queso al pomelo


  • 55 gr (1/4 cup) azúcar
  • 200 gr de queso crema tipo philadelphia
  • 30 gr de mantequilla pomada
  • 1 huevo
  • 1 tsp de vainilla
  • 2 tbps de Maicena
  • 100 gr de pomelo deshidratado molido
Encendemos el hornao a 180ºC
Vamos primero con el bizcocho, 
La verdad es que es de los más sencillos que hay, se pone todo junto y a la vez en la batidora y se mezcla hasta que esté homogéneo.
Y ahora el relleno
  • En el bol de la batidora de baten con la pala el azúcar y el queso crema
  • Se añade la mantequilla.
  • Se añade el huevo y la vainilla
  • Se añade las cucharadas de Maicena, una cada vez alternadas con el pomelo deshidratado y triturado. Unas cuantas vueltas y ya está.
  • Se mete en manga pastelera y se reserva en la nevera si es necesario.
Bueno, pues ya lo tenemos todo para preparar el molde.
Ponemos la mitad de la mezcla de chocolate en el fondo del molde. Yo esperaba que esta mezcla fuera espesa comopara soportar el peso del relleno pero resulto muy liquida, así que empecé a poner el relleno de cheese cake con la manga, intentando qe no tocara las pareces y deseando fervientemente que no se fuera al fondo. Cuál so sería mi sorpresa cuando al cubrir con el resto de chocolate, el relleno subió a la superficie y flotaba!
Se hornea cruzando los dedos sin que el horno te vea unos 50-60 minutos. Sube una barbaridad y el relleno desaparece en el avismo...
Se saca del horno y se deja enfriar casi copletamente en el molde; es un Bundt muy blando cuando está caliente y puede desmoronarse. El mío ha salido especialmente renegrido y creí que se había quemado pero, qué va, está perfecto.
Se desmolda finalmente y recordad que a pesar de asentarse cuando se enfria es de constitución frágil. 
Pues aquí lo tenéis, con el relleno tocando el fondo, o casi pero relleno al fin y al cabo y lo mejor de todo es que me lo he pasado bomba haciendolo y que esta buenísimo.

In this occasion our host is Anshie from spice roots and the ingredient is "surprise filling". The possibilities are countless and this makes it so much difficult to choose; the only condition is that this surprise has to be found inside the cake. Well thank you Anshie for hosting and for suggesting this mysterious and imaginative ingredient.

After a lot of thinking and planning the real surprise for me has been watching the cake raise in the oven (I was not at all sure it would). I was not sure of the combination of tastes either and this has been the second wonderful surprise as it has come out moist, delicious and in perfect shape. 

By the way my recipe is : Chocolate Bundt Cake with grapefruit cheesecake surprise filling. There!


INGREDIENTS for the cake mixture

2/3 cup cocoa, sifted
2 1/4 cups all-purpose flour
2 cups sugar
1 1/2 tsp baking powder
1 1/2 tsp baking soda
3/4 tsp salt
1 1/2 cups orange juice (or half orange juice and half water, or just water)
3 eggs
2 tsp vanilla
1 1/4 cups vegetable oil

INGREDIENTS for the grapefruit cheese cake surprise filling

1/4 cup sugar
8 ounce cream cheese, softened
2 tbsp butter, room temperature
1 egg 
1 tsp vanilla extract
2 tbsp cornstarch
1 cup dessicated grapefruit  



Grapefruit Cheese cake mixture 

  • Place the soft cheese, butter and 1/4 cup of sugar in the bowl of the electric mixer fitted with the paddle attachment. Beat for 2-3 minutes on medium/high speed.
  • Beat in the vanilla and the egg for another 2 min
  • Add the cornstarch and grapefruit one tablespoon at a time, scraping down the bowl and beating until all ingredients are incorporated. Set aside. 
 
Cake mixture


  • Generously grease and flour a 12-cup bundt pan.
  • In a large mixing bowl combine all the cake ingredients; mix on medium speed for about 3 minutes.
  • Fill half the Bundt pan with the mixture and very carefully put the cheese mixture over it trying not to reach the sides of the pan.
  • Cover with the rest of the cake mixture and bake for 50-60 minutes or until it is done.
  • Cool in the pan for about 15 minutes before removing. 
      
This is how it worked for me.I put half the chocolate mixture in the pan. I was expecting a sort of quite solid mixture that would hold the filling easely but, no such luck! the cake mixture was very runny so I decided to use a pastry bag to place the filling. I am no good with pastry bags. I started crossing my fingers behind my back and squeezing the cheesecake mixture into the pan (not at the same time) trying no to touch the sides and hoping it wouldn't sink. Finished with the rest of the chocolate mixture. To my surprise I could see the filling floating in the surface. Pretending everything was all right and floating fillings were normal I baked the Bundt 50-60 minutes.





This is a very delicate cake and I let it cool in the pan until it was nearly completely cold. Handle with care. My Bundt turned up very black but not burned, with the filling finally touching the bottom so it sank again during the process. But I must say that it has a lovely texture, fantastic taste and I had lots of fun making it.
