BUNDT DE COCO Y ZANAHORIA, COCONUT AND CARROT BUND CAKE #BUNDT BAKERS

Hola otra vez y, aunque con unos días de retraso...FELIZ AÑO!!!!

Últimamente tengo poco tiempo para compartir recetas, pero este mes no podía faltar a la cita de Bundt Bakers.

En esta ocasión la anfitriona es Terry Truscello y el ingrediente escogido es el coco en cualquiera de sus versiones. Terry, gracias por esta magnífica idea!

Y allá vamos con la receta. 

Hace unos cuantos años compré en Londres un libro de cocina vegetariana del restaurante Cranks, The Cranks Recipe Book y en él encontré esta estupenda receta que es una versión del pastel de zanahoria tradicional pero mejorado con coco rayado, lo cual de la una textura más húmeda y un sabor especial que nadie identifica con el coco. Os recomiendo que probéis esta mezcla. Os encantará. 

INGREDIENTES

Zanahoria rallada 175gr
Huevos 2
Azúcar moreno 100gr (de buena calidad, no el que venden en supermercados normales)
Aceite vegetal suave 75ml
Harina con levadura 100gr
1 Tsp de canela
1/2 Tsp de nuez moscada
Coco rallado 50gr
Pasas 50gr (optativo)

Bueno, para gente que tenga la Thermomix las instrucciones son rápidas:
-encender el horno a 180ºC
-Pesar y rallar la zanahoria 4seg vel5 (aquí podéis variar según os guste más o menos gruesa)
-añadir el resto de los ingredientes excepto las pasas y mezclar 1min vel3
-añadir las pasas y mezclar a mano
La mezcla tiene un aspecto como de engrudo bastante líquido. Ni caso, así tiene que ser.  

-poner en un molde, en este caso de Bundt pero cualquier molde no muy alto puede servir.
-Hornear unos 20min vigilando un poco. No sube mucho y el color es tostado así que ojo con dejar que se queme! 
-Desmoldar como siempre en rejilla después de unos minutos de haberlo sacado del horno.

Para la gente que no tenga Thermomix seguid los pasos igual pero mezclando a mano o con batidora eléctrica añadiendo los ingredientes por el orden que se muestra en el listado.

Y ya está, se sirve para merendar con té o café y está de verdad muy bueno.

On this occasion our host is Terry Truscello and the special ingredient is coconut. Thank you Terry for hosting and for such an interesting idea.

This recipe comes from The Cranks Recipe Book. Cranks was one of the first vegetarian restaurants in London and its Coconut Carrot Cake is one of the all favorite recipe. The adition of carrots to this coconut cake gives a very moist texture.




INGREDIENTS for a 7'' cake tin

Carrots 6 oz
Eggs 2
Raw brown sugar 4 oz
Oil 3 fl. oz
Self-raising flour 4 oz
Ground cinnamon 1 tsp
Ground nutmeg 1/2 tsp
Desiccated coconut 2 oz
Raisins 2 oz (optional)

Preheat the oven at 375ºF/Mark 5

Finely grate the carrots.
Whisk the eggs and sugar together until thick and creamy.
Whisk in the oil slowly, then add the remaining ingredients and mix together to combine evenly.
Spoon the mixture into the prepeared tin.
Level the surface and bake for 20-25 minutes, until firm to the touch and golden brown.

And that's it! I can assure you that even people who don't appreciate coconut much will love this cake.
